Yogurt and Treacle

 All you need to buy is yogurt (preferably buffalo curd) and some treacle and you’ve got yourself a traditional Sri Lankan dessert. Simple is best!

INGREDIENTS:

If you want to make your own treacle:

225 g jaggery
1/2 cup water

 

METHOD:

  1. In a heavy-bottomed pan bring the jaggery and the water slowly to the boil.
  2. The heat should be kept to a minimum until the jaggery has dissolved.
  3. Once the jaggery has dissolved bring it to the boil and allow to reduce until you have a thick pouring sauce.
  4. Strain into a sauceboat or jug and pour over the yogurt before serving.
